Here is a great pumpkin muffin recipe with less than 100 calories, that I like to make and send with my husband in his truck for a healthy snack.  Pumpkin muffins are very good, very healthy. With only 3 ingredients, it takes no time at all to prepare. My kids even love this recipe! This pumpkin muffin recipe is very easy to name let’s get started!

 

Ingredients:

1 box of Duncan Hines Moist Spice Cake

1 – 15 oz. can of 100% Pure Pumpkin

1/2 cup Water

Directions:

1. Preheat oven as directed on cake mix box.

2. Place muffin papers in muffin pan. Spray papers with fat free, calorie free, nonstick cooking spray.

3. Mix spice cake mix, water, and pumpkin together. Fill muffin papers about half full of mix. Just try to even them out if you still have some mixture left (should use all of mixture to make 24 servings).

4. Bake according to instructions on back of cake mix box. (If you use the Duncan Hines brand, the time will be 18-21 minutes at 325 degrees Farenheit)

1 serving = 1 muffin. Makes 24 servings.

For a little sweeter muffin I like to sometimes throw in some chocolate chips into the mix before putting in the muffin papers. Who can resist a pumpkin chocolate chip muffin?
